Hi Louise, the ground almonds are being used as a kind of flour here. Lastly, and most importantly mix the flour and rest of ingredients with the eggs using a spatula and very light movements. And last question, I want to bake it in a 9 inch pan. You could also try reducing flour and replacing it with the same weight of porridge oats. After several attempts, I have finally worked out a new Gluten Free cake based on a can of butter beans or cannelloni beans. We still keep those treats for weekends, as we try to keep our dependence on and preference for sweet things to a minimum. Did I leave them in the oven too long or is chestnut flour a bad choice?
